Recipe for Roasted Granny Smith Apple Puree with Fresh Mint (6-9 months)
This refreshing puree is packed with flavour and will become a favourite of your baby and mom and dad too!
Yields about 2 cups
Preheat oven to 300 degrees F (150 degrees C)
2-1/4 cups Granny Smith Apples (or apple of choice), cored 550 mL
1 cup water 250 mL
1 tsp chopped fresh mint leaves 5 mL
1. On a baking sheet, roast the apples until golden brown, about 20 minutes. Remove from heat.
2. In a saucepan, combine apples and water. Bring to a boil over medium and cook until liquid has reduced by half, about 5 minutes.
3. Transfer to a blender or use an emersion blender, add the fresh mint, puree until smooth or to desired consistency. Refrigerate for up to 3 days or freeze for up to one month.
*For mom and dad, this makes a wonderful accompaniment to grilled pork chops!*
